Christmas Shortbread
Shortbreads are my go to quick bake cookie made with my mum’s classic Scottish 3-2-1 recipe (flour-sugar-butter) but at Christmas time you can tweak the recipe so that it will keep its Christmas cookie shape better or to add just a hit of Christmas flavour.
Classic Scottish Shortbread
The classic recipe is just cream the butter, beat in the sugar and then slowly work in the flour with a knife. The flour will look like it won’t go in. Keep going, it will.
I usually make in batches of 6 ounces of flour and work it together into two balls.
Then roll out very gently to about 50mm thick, pressing down more than rolling and using sugar rather than flour to stop your rolling pin sticking.
Bake for 15 to 20 minutes at 150c/130c fan.

The Best Christmas Cookie Icing
There is lots of debate about the best Christmas cookie icing.
To be honest I think it’s horses for courses and different icings will be best for you depending on how much time you have and what type of Christmas style you are after.
I’ll take you through the options and pros and cons below.
These are your main options and their pros and cons:
- Royal icing with egg white : a crisp icing that can be used for perfect decorating and dries very hard if you need to stack cookies on top of each other.
- Royal icing with meringue powder : almost
Royal Icing For Christmas Cookies
Traditional royal icing is made with egg whites. It gives you a beautiful smooth finish that can be used for perfect decorating and it dries very hard so is best if you need to stack cookies on top of each other.
You need to be quite careful to get your egg whites to the right consistency.
If you don’t want to use raw egg white you can make royal icing with royal icing with meringue powder.
Glaze Icing For Christmas Cookies
Glaze icing with milk and corn syrup is easier to make than royal icing. It will give a smooth, shiny finish but won’t stand up quite as well to cookie stacking.
You do need to be a bit careful about which corn syrup to buy as some seems to be even worse for our blood sugar levels than straight forward sugar.

Glace Icing For Christmas Cookies
Glace icing is the absolute easiest and quickest icing of all.
It is literally icing / confectioners sugar mixed with tiny amounts of water or milk.
It is very easy to mix into different colours and for under fives to use for lovely messy cookie decorations.
Glace icing won’t set very hard so can get squidged if you are stacking cookies.
How To Freeze Christmas Cookies
The smell of freshly baked Christmas cookies does take some beating however awesome our time management efforts, our lives these days are over busy and most of us won’t be whipping up batches of Christmas cookies every few days for the hungry hoards in our home in December.
But the brilliant news is we can actually freeze Christmas cookies and freeze Christmas cookie dough, so we can do a bulk batch of baking or cookie dough making for eating all the way through December.

How To Freeze Cookie Dough
- Freeze separately wrapped slices of dough so you only have to defrost a little before cutting shapes.
- Cut cookies as soon as soft enough for cutter to go through.
- You can flash freeze individually cut or dropped cookies so they can go straight from the freezer to the oven but this is better for thicker, rougher styled cookies like snickerdoodles and crinkle cookies rather than anything where you want to keep a beautiful shape.
- Cook from frozen adding a few minutes onto the cooking time.
How To Freeze Baked Cookies
- Generally freeze cookies baked but not decorated.
- After cooling put back onto a baking sheet and flash freeze for an hour after which they will be frozen enough to be put into freezer bags without sticking to each other.
